PUMPKIN ROLL
INGREDIENTS:
- 2/3 cups cooked pumpkin
- 3 eggs
- 1 cup sugar
- ¾ cups flour
- 2 tsp cinnamon
- 1 tsp baking powder
- ½ tsp salt
- 1 cup powdered sugar
- 8 oz cream cheese softened
- ¼ cup butter
- ½ tsp vanilla
DIRECTIONS:
- Beat eggs at high speed for 5 minutes until pale yellow
- Gradually stir in 1 cup plain sugar
- Stir in pumpkin, flour, baking powder, salt and cinnamon
- Bake in jelly roll pan at 375ºF for 15 minutes
- When done lay out on tea towel and refrigerate
- Combine powdered sugar,cheese, butter and vanilla
- Beat until smooth
- Spread onto pumpkin bread and roll up
- Refrigerate until serving time
